The History of Recipes
We can follow the history of `recipes` way back into ancient history, in fact as far as the Egypt of the Pharoahs, and potentially, even further back. In practice though, in the main part, these ancient cookbooks were just simple hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe found, according to experts are some ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius compiled some scripts showing how to cook the recipes prepared by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvre, entrees and afters, something we still use today. Aspicius recounts how the early Romans made use of a good variety of aromatic flavors, including a few you will know such as thyme, mint and parsley. For the centuries that followed, the rich families of Europe strove to lay on the most extravagent banquests, and as a result the best chefs and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the 1800s that formal cookery and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, trying out, and writing down popular recipes of the day. By the time we get to the 20th century, recipe books were starting to become popular as a result of increased literacy, people having increased leisure time and disposable income. |
