1 cup amaranth cereal
1/4 cup whole wheat pastry flour
1 tsp baking powder
1 egg replacer for 1 egg
3/4 cup soy, rice, or nut milk
Directions
In a medium-sized bowl, mix together the cereal, flour, egg
replacerand baking powder. Pour the milk over the mixture and beat
with a spoon until the ingredients are well combined. If the batter
is too thick, you may add a little more milk.
Drop the batter by the 1/4 cup into a hot, oiled skillet and cook
over medium-high until bubbles begin to appear on the tops of the
pancakes. Turn them over and cook until done.

The History of Recipes
We are able to track the history of `recipes` way back into history, in truth as far back into history as ancient Egypt, and maybe further still. However, mostly, these early cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe discovered so far, according to historians is a series of ancient tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As we move into The time of the romans 25BC a man called Apicius created a number of scripts which described recipes cooked by his fellow Romans. In his scrolls, he recounts how the meals were split into appetizers, main course and dessert, something we still use today. He also tells us how the ancient chefs were skilled in the use of many different spices and herbs, including a few that will be familiar to modern chefs such as thyme, mint and asafoetida. Closer to modern times, we have two books which were published in the 1300s : one book called `Forme of Cury`, and another called `Curye on Inglish`. Perhaps surprisingly, these two books are not about the indian food that is familiar to us all today, but rather accounts of the types of food enjoyed by the rich and powerful of that time. Later, in the 15th century, knights returning from the crusades brought us many new foods and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new foods and spices led to a torrent in recipe publications, many of which still exist in private cookery archives. By the time we get to the twentieth century, cooking publications were starting to become popular mostly as a result of higher levels of literacy, leisure time and having more money. Like it or not, the introduction of TV brings us celebrity TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like those on this site. |
