1 cup amaranth cereal
1/4 cup whole wheat pastry flour
1 tsp baking powder
1 egg replacer for 1 egg
3/4 cup soy, rice, or nut milk
Directions
In a medium-sized bowl, mix together the cereal, flour, egg
replacerand baking powder. Pour the milk over the mixture and beat
with a spoon until the ingredients are well combined. If the batter
is too thick, you may add a little more milk.
Drop the batter by the 1/4 cup into a hot, oiled skillet and cook
over medium-high until bubbles begin to appear on the tops of the
pancakes. Turn them over and cook until done.

The History of Recipes
We are able to track the history of `recipes` far back into the far past, in fact as far as pharonic Egypt, and possibly even further than that. However, sadly, these old records were just basic hieroglyphic recipes for preparing food.
The truth of the matter is, the most ancient recipe found, according to food historians are a few ancient tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. As we move into The time of the romans around 25BC a roman called Apicius created some documents showing how to cook the recipes prepared by wealthy roman citizens. In his works, Apicius describes how the meals were divided into starters, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the ancient Romans were skilled in the use of many different spices, including a few that will be familiar to modern chefs such as bay, mint and asafoetida. During the next few centuries, the powerful and rich strove to lay on the most extravagent meals, and as a result cooks and their recipe collections could command a high salary. Nevertheless, it was during the 1800s the formal cooking and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, testing, and publishing popular recipes of the day. By the advent of the 20th century, cookbooks are starting to become popular as a result of increased literacy, people having more spare time and having more money to spend. |
