1 cup amaranth cereal
1/4 cup whole wheat pastry flour
1 tsp baking powder
1 egg replacer for 1 egg
3/4 cup soy, rice, or nut milk
Directions
In a medium-sized bowl, mix together the cereal, flour, egg
replacerand baking powder. Pour the milk over the mixture and beat
with a spoon until the ingredients are well combined. If the batter
is too thick, you may add a little more milk.
Drop the batter by the 1/4 cup into a hot, oiled skillet and cook
over medium-high until bubbles begin to appear on the tops of the
pancakes. Turn them over and cook until done.

The History of Recipes
We are able to track the history of `recipes` way back into the far past, certainly as far back into history as pharonic Egypt, and possibly even further. Interesting though that is, these, ancient recipes were just basic hieroglyphic recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered so far, according to experts in ancient history are a few tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the romans around 25BC a man called Apicius created some scripts detailing recipes enjoyed by the Romans. In his works, he describes how the roman meals were separated into starters, main course and afters, a very modern way of dining. Additionally, he tells us how the ancient Romans used a wide range of spices and herbs, including some that we all recognise such as bay, mint and dill. Later, in the fifteenth century, knights returning from the crusades brought back a variety of foods and spices from middle-east cuisine, such as basil and rosemary. The introduction of these new culinary ideas was responsible for an increase in manuscripts on cooking, most of which still exist in private libraries. During the next few centuries, the upper-class families of Europe competed to serve up the most extravagent banquests, and because of this cooks and their collection of recipes could command a high salary. However, it was during the nineteenth century that cooking and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. By the advent of the 20th century, cooking books are highly popular as a result of higher levels of literacy, more spare time and a general increase in wealth. |
