The History of Recipes
Academics have proved the existence of recipes way back into the far past, certainly as far as the early Egyptians, and quite possibly further than that. Having said that, these, early recipes were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to historians are a few tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire 25BC a man called Apicius created some scripts detailing recipes prepared by wealthy roman citizens. He tells us how the roman meals were divided into hors d`oeuvres, entrees and afters, something that is very familiar to us today. Aspicius also recounts how the Roman cooks used a good variety of spices and herbs, including a few you will know for example bay, mint and parsley. In the 15th century, knights returning from the crusades brought back a variety of spices and herbs from Arab cuisine, including spices like coriander, basil and rosemary. These new culinary innovations caused a surge in manuscripts on cookery, some of which are now in private cookery archives. Over the next few centuries, the upper-class families of Europe competed to lay on the most exotic banquets, and because of this the best chefs and their recipes were greatly in demand. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, testing, and writing down recipes common in their social group. When we get to the twentieth century, cookery publications are increasing in popularity mostly as a result of increased literacy, more free time and having more disposable income. The TV revolution brings us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the internet revolution, permitting everyone to access massive numbers of recipes just like those on this web site. |
