Directions

The History of Recipes
Academics have proved the existance of recipes back into ancient history, in truth as far back into history as the Egyptians, and potentially, even further back. Having said that, mostly, these old cook books were just very basic hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to historians are a few tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. During the time of the Roman Empire a man called Apicius created some documents which described recipes enjoyed by wealthy roman citizens. He tells us how the roman meals were divided into appetizers, main meal and dessert, a very modern way of dining. This early Roman chef recounts how the Roman cooks were skilled in the use of many different herbs, including some familiar names for example bay, rue and asafoetida. In the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from the holy lands, including spices like rosemary and coriander. These new culinary innovations created an eruption in recipe manuscripts, the majority of which still exist in private libraries. Over the following few hundred years, the rich families of the West tried to serve the best banquets, and consequentially the best chefs and their recipe collections were greatly in demand. Notwithstanding that, it was during the 19th century that fine cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, verifying, and writing down recipes of the day. By the arrival of the 20th century, cooking publications were increasing in popularity due to better eduction, people having increased spare time and having more money. |
