The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions far back into ancient history, in truth as far back into history as the early Egyptians, and maybe further still. In practice though, sadly, these ancient cookbooks were just very basic hieroglyphic or cunieform instructions for meal preparation.
In fact, the oldest recipe in existence, according to academics are a few clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. Later on, there are some recipe books which were published in the 1300s : a cookery book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, these books are not about the indian food that is served today, but rather accounts of the types of meals prepared for the rich people of the time. Later on in the 1400s, the Crusaders brought back many foods and spices from Arab cooking, such as parsley, basil and rosemary. These new foods and spices caused a torrent in publications on food, the majority of which still exist in private cookery archives. For the centuries that followed, the powerful families of the West competed to offer the most extravagent meals, and as a consequence, cooks and their collection of recipes were at a premium. Nevertheless, it wasn`t until the nineteenth century that fine cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, testing, and recording the recipes that were being prepared for the better households. The introduction of the TV brought us TV cookery programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes such as those found on this site. |
