The History of Recipes
It is actually possible to track the history of recipes way back into distant history, certainly as far back into history as the early Egyptians, and maybe further still. Interesting though that is, generally, these ancient recipes were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the most ancient recipe in existence, according to academics are some clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. As we move into The time of the romans around 25BC a roman called Apicius assembled a collection of scripts which described recipes enjoyed by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, main meal and afters, something we still use today. Additionally, he describes how the cooks of Roman times made use of a good variety of aromatic flavours, including some that we all recognise for example thyme, mint and asafoetida. As we move on, we have a couple of interesting cookery books which appeared in the fourteenth century - a cookery book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, these are unconnected to the curry that is familiar to us all today, but instead recipes for the types of food enjoyed by the nobility of the time. Later, in the fifteenth century, knights returning from the crusades brought back many new foods and herbs from Arab countries, including spices like coriander, parsley, and rosemary. The introduction of these new tastes prompted an eruption in manuscripts on cooking, most of which are kept safe in private libraries. During the next few centuries, the upper-class families of Wesstern Europe tried to serve the most extravagent meals, and as a consequence, the best chefs and their recipes were much in demand. Notwithstanding that, it wasn`t until the 19th century that cooking and recipe books became popular. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and writing down the recipes of their peers. By the advent of the 20th century, cooking books are increasing in popularity mostly as a result of more people being able to read, people having increased spare time and having more disposable income. The revolution that is television brings us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes such as those found on our site. |
