The History of Recipes
Transcribed cooking instructions as an idea can be traced way back into antiquity, in truth as far back as the Egypt of the Pharoahs, and potentially, even further back. However, generally, these old records were just primitive hieroglyphic instructions for meal preparation.
In an interesting twist, the most ancient recipe found, according to experts is a collection of clay tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. Moving our culinary historical trip onwards, there were two books published in the fourteenth century ; a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, these two books have no connection with the spicy food that is served today, but instead recipes for the types of food on the menues of the nobility of that time. In the 15th century, people returning from the crusades brought us many new foods and spices from the East, including spices like parsley and basil. These new foods and spices led to an explosion in cookery books, the majority of which are kept safe in private libraries. Over the next few hundred years, the rich and powerful families of Wesstern Europe tried to offer the most extravagent banquests, and as a result the best chefs and their recipe collections became highly prized. Nevertheless, it was during the 19th century the formal cooking and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to assembling, trying out, and recording recipes common in their social group. When we get to the 1900s, cookery books were starting to become popular as a result of increased literacy, people having increased leisure time and disposable income. The arrival of TV brings us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to search through massive numbers of recipes just like those on sites such as this. |
