The History of Recipes
It is quite feasible to follow the history of recipes way back into the far past, in fact as far back into history as the Egyptians, and quite possibly further than that. In practice though, generally, these old records were just simple pictorial recipes for food preparation.
Interestingly, the oldest recipe discovered so far, according to academics are a few stone tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. As we move into The time of the romans 25BC a man called Apicius compiled a collection of documents describing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into starters, main meal and desserts, a very modern way of dining. Additionally, he recounts how the cooks of Roman times made use of a good variety of spices, including a few you will know such as basil, fennel and dill. Closer to modern times, there are some recipe books from the 14th Century ; a cookery book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Perhaps surprisingly, they are unconnected to the indian curry that we all know today, but rather accounts of the types of meals on the tables of the rich people of that period. Later, in the 15th century, the Crusaders brought back many foods, spices and herbs from Arab cuisine, such as rosemary and coriander. The introduction of these new foods and spices was responsible for an eruption in recipe books, the majority of which still exist in private cookery archives. During the succeeding few centuries, the powerful families of Europe competed with each other to offer the best banquets, and because of this cooks and their recipe collections were at a premium. Nevertheless, it was during the 19th century that cookery and cookery books really came of age. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, testing, and writing down recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, cooking books were in great demand, due to higher levels of literacy, people having more free time and having more disposable income. Like it or not, the introduction of TV brought us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everybody to search through massive numbers of recipes such as those found on this web site. |
