The History of Recipes
It is possible to trace the history of written recipes way back into antiquity, certainly as far as early Egypt, and maybe even further. However, mostly, these early recipes were just primitive pictorial instructions for preparing food.
The truth of the matter is, the oldest recipe discovered so far, according to experts in ancient history is a collection of clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. Later on, in The time of the roman empire around 25BC a roman called Apicius compiled a number of documents detailing recipes prepared by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main course and desserts, something that is very familiar to us today. This early Roman chef describes how the ancient chefs were skilled in the use of a good variety of aromatic flavours, including a few you will know such as bay, rue and asafoetida. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods and herbs from Arab cuisine, including spices such as basil and rosemary. These new herbs and spices caused an increase in books on cooking, some of which are kept safe in private collections. During the following few hundred years, the rich and powerful families of Wesstern Europe competed to lay on the most exotic meals, and because of this chefs and their collection of recipes increased in prestige. Even so, it wasn`t until the nineteenth century that fine cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and writing down recipes for their fellow cooks to enjoy. By the time we get to the 1900s, cookery books were highly popular mostly as a result of higher levels of literacy, leisure time and a general increase in wealth. |
