The History of Recipes
Food historians have traced the existance of recipes far back into ancient history, certainly as far into history as pharonic Egypt, and quite possibly further than that. In practice though, in the main part, these ancient recipes were just very simple hieroglyphic instructions for meal preparation.
During the time of the Romans a roman called Apicius created a collection of scripts detailing recipes prepared by his fellow Romans. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the Romans were skilled in the use of a good variety of herbs, including a few that will be familiar to modern chefs for example basil, rue and parsley. Later on, in the 15th century, people returning from the crusades brought us a variety of foods, spices and herbs from Arab cooking, including parsley, basil and rosemary. The introduction of these new tastes created a torrent in books on cooking, the majority of which are kept safe in academic collections. When we get to the 20th century, cookery books are highly popular due to more people being able to read, people having more spare time and being a little richer. |
