The History of Recipes
We can track the history of `recipes` way back into ancient history, certainly as far into history as ancient Egypt, and quite possibly further than that. In practice though, in the main part, these old records were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
In fact, the oldest recipe discovered, according to Professor Solomon Katz, are some tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Later on, in Roman times around 25BC a man called Apicius compiled some scripts describing recipes cooked by the Romans. In his publication, Apicius tells us how the roman meals were separated into appetizers, main course and afters, something we still use today. He also informs us how the early Romans used many different spices and herbs, including a few that will be familiar to modern chefs like basil, rue and asafoetida. Later on in the 1400s, knights returning from the crusades brought us many spices and herbs from the holy lands, including spices like parsley and basil. The introduction of these new tastes led to a torrent in manuscripts on cooking, most of which still exist in private collections. For the next few years, the rich families of Europe competed with each other to lay on the most exotic meals, and consequentially the best chefs and their recipe collections were highly sought after. Notwithstanding that, it was during the nineteenth century that cooking and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the advent of the twentieth century, recipe books were in high demand, mostly due to better eduction, people having increased free time and being a little richer. |
