The History of Recipes
Historians have found proof that recipes existed way back into distant history, in fact as far as pharonic Egypt, and potentially, even further back. However, sadly, these ancient cookbooks were just simple hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe in existence, according to historians is a collection of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. Progressing into The time of the romans around 25BC a man called Apicius created some scripts which described recipes prepared by his fellow Romans. In his publication, Apicius tells us how the meals were divided into appetizers, main course and desserts, something that is very familiar to us today. Aspicius also describes how the cooks of his times were skilled in the use of many different herbs, including a few you will know like thyme, fennel and parsley. During the next few hundred years, the upper-class families of Europe tried to serve the most exotic meals, and as a consequence, the best chefs and their recipes were much in demand. Nevertheless, it was during the nineteenth century that cookery and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, verifying, and publishing recipes to allow everyone to enjoy them. By the advent of the 1900s, cooking publications were increasing in popularity mostly due to more people being able to read, people having increased spare time and having more money. Like it or not, the introduction of TV brings us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, allowing everyone to access massive numbers of recipes like those on this web site. |
