The History of Recipes
It is quite possible to trace the history of recipes far back into the distant past, in truth as far into history as pharonic Egypt, and possibly even further. Interesting though that maybe, mostly, these ancient records were just very basic pictorial recipes for preparing meals.
During Roman times 25BC a roman called Apicius created a few documents which described recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the meals were split into appetizers, entrees and dessert, a style of dining still practiced today. This early Roman chef tells us how the Roman cooks were skilled in the use of a wide range of spices and herbs, including some that we all recognise for example bay, fennel and asafoetida. In the fifteenth century, people returning from the crusades brought us many new foods and herbs from Arab cuisine, such as rosemary and coriander. The introduction of these new herbs and spices led to an outbreak in recipe publications, many of which still exist in private collections. By the arrival of the 1900s, cookery books are increasing in popularity mostly as a result of higher levels of literacy, more spare time and being a little richer. |
