The History of Recipes
It is actually possible to trace the history of recipes way back into the far past, in fact as far back into history as the ancient Egyptians, and potentially, even further back. Interesting though that is, these, early cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
As we move into Roman times 25BC a roman called Apicius assembled a collection of scripts showing how to cook the recipes enjoyed by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the cooks of Roman times were skilled in the use of a good variety of spices, including a few that will be familiar to modern chefs like basil, mint and parsley. Later, in the fifteenth century, knights returning from the crusades brought back a variety of spices and herbs from Arab cooking, including spices like rosemary and coriander. The introduction of these new culinary ideas led to an outbreak in cookery books, the majority of which are now in private collections. By the advent of the 20th century, cooking books are greatly in demand mostly due to more people being able to read, people having increased leisure time and being a little richer. |
