Apple Cheddar Cookies Recipe

Ingredients

1/2 cup butter
1/2 cup sugar
1 each egg, lg
1 tsp vanilla
1 1/2 cup unbleached flour
1/2 tsp baking soda
1/2 tsp cinnamon, ground
1/2 tsp salt
6 oz cheddar, sharp, shredded
1 1/2 cup apples, cored,peeled,chopped
1/4 cup nuts, chopped


Directions

Cream the butter and sugar until light and fluffy, then stir in the
egg and vanilla. Add the combined dry ingredients, blending well.
Stir in the cheese, apples and nuts. Drop rounded teaspoonfuls of the
dough onto an ungreased cookie sheet and bake at 375 degrees F. for
15 minutes. Remove from the cookie sheet and cool on a wire rack or
plate.

The History of Recipes

Food historians have proved the existance of recipes far back into the far past, certainly as far as early Egypt, and quite possibly further than that. In practice though, these, old cookbooks were just very simple pictorial instructions for meal preparation.

Fascinatingly, the oldest recipe discovered so far, according to academics are some stone tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful.

During the time of the Roman Empire a roman called Apicius created some documents detailing recipes prepared by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were separated into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the early Romans used many spices, including a few you will know like basil, mint and asafoetida.

As our culinary historical trip moves on a few more years we find a couple of cookery books which appeared in the fourteenth century : a cookery book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these two books are not about the indian curry that is served today, but instead recipes for the types of meals cooked for the rich and powerful of that time.

In the fifteenth century, people returning from the crusades brought back a variety of foods and herbs from middle-east cuisine, including spices like coriander, parsley, basil and rosemary. The introduction of these new culinary ideas led to a torrent in recipe books, some of which are kept safe in private collections.

Over the following few hundred years, the powerful and rich competed to lay on the most extravagent meals, and because of this the best chefs and their collection of recipes were at a premium. However, it was during the nineteenth century that cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collating, testing, and publishing recipes to allow everyone to enjoy them.

By the arrival of the 20th century, cookbooks are highly popular mostly as a result of higher levels of literacy, people having increased spare time and having more disposable income.
