The History of Recipes
It is possible to read the history of meal recipes way back into history, in fact as far as the Egypt of the Pharoahs, and potentially, even further back. In practice though, in the main part, these early records were just very simple hieroglyphic or cunieform instructions for meal preparation.
In fact, the most ancient recipe discovered, according to food historians is a collection of clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Later on, in The time of the roman empire 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes prepared by wealthy Romans. In his publication, he tells us how the meals were divided into hors d`oeuvre, main course and afters, a very modern way of dining. This early Roman chef recounts how the Romans were skilled in the use of many different herbs, including some that we all recognise such as thyme, rue and parsley. Later, in the fifteenth century, knights returning from the crusades brought back many new foods and spices from the holy lands, including spices like coriander, basil and rosemary. The introduction of these new tastes prompted an increase in cookery books, most of which are kept safe in private libraries. For the decades that followed, the upper-class families of the West strove to lay on the most extravagent banquests, and consequentially the best chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century the formal cooking and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collating, verifying, and writing down popular recipes of the day. The arrival of television brings us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting everyone to access massive numbers of recipes like those on the site you are now reading. |
