The History of Recipes
Food historians have found proof that recipes existed way back into antiquity, in fact as far back as the early Egyptians, and possibly even further than that. In practice though, sadly, these ancient cookbooks were just very simple hieroglyphic instructions for preparing food.
In fact, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Later on, we have some books which were published in the fourteenth century ; one book called `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the indian curry that is served today, but instead descriptions of the types of food prepared for the upper classes. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and spices from the holy lands, including spices like rosemary and coriander. These new culinary innovations prompted an eruption in books on cookery, some of which are kept safe in private collections. For the centuries that followed, the upper-class families of Wesstern Europe strove to serve up the most extravagent meals, and consequentially the best chefs and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, trying out, and publishing recipes for their fellow cooks to enjoy. By the advent of the twentieth century, cooking books are greatly in demand as a result of better eduction, people having increased spare time and being a little richer. The introduction of the TV brings us TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes such as those found on sites such as this. |
