The History of Recipes
Food historians have traced the existance of recipes far back into history, at least as far back into history as early Egypt, and quite possibly further than that. Having said that, sadly, these ancient recipes were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
Later on, in Roman times 25BC a roman called Apicius wrote a number of scripts describing recipes prepared by wealthy Romans. In his publication, he recounts how the roman meals were divided into appetizers, main course and afters, something we still use today. This early Roman chef describes how the early Romans were skilled in the use of a wide range of spices, including some that we all recognise for example bay, fennel and dill. During the succeeding few hundred years, the powerful and rich houses competed with each other to offer the most extravagent meals, and because of this the best cooks and their recipe collections could command a high salary. Even so, it was during the nineteenth century that formal cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, testing, and recording the recipes of their peers. Like it or not, the introduction of television gave us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to access massive numbers of recipes just like those on this web site. |
