The History of Recipes
Written recipes as an idea can be traced far back into ancient history, certainly as far into history as the Egypt of the Pharoahs, and maybe further still. Interesting though that maybe, these, early recipes were just very simple pictorial recipes for preparing meals.
In an interesting twist, the oldest recipe found, according to experts are some stone tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. Later on, in The time of the romans 25BC a roman called Apicius created a collection of documents describing recipes cooked by wealthy roman citizens. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the early Romans used many different herbs and spices, including some familiar names like basil, fennel and parsley. Over the succeeding few centuries, the rich and powerful families of the West competed with each other to lay on the most extravagent banquests, and as a result the best cooks and their recipes became highly prized. Even so, it wasn`t until the nineteenth century that haute cuisine and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to assembling, verifying, and writing down recipes to help cooks of their time. When we get to the 20th century, cookery books are in high demand, as a result of increased literacy, people having more spare time and disposable income. |
