5 tbsp butter
1 cup onion, diced
2 cup bread, crumbs
2 pippin apples, chopped
1 cup white wine
2 tbsp lemon juice
1/4 tsp nutmeg
1/4 tsp allspice
1 cup almonds, chopped
Directions
In frying pan, melt butter and saute onions until they are clear. In a
bowl, combine the bread crumbs with the onion mix. Add apples and
wine. Return to pan and cook 5 minutes longer. Add the remaining
ingredients Stuff into turkey neck and body cavities.

The History of Recipes
Written recipes as an idea can be tracked back into ancient history, at least as far as ancient Egypt, and maybe further still. Interesting though that maybe, mostly, these early cook books were just primitive pictorial recipes for food preparation.
In an interesting twist, the oldest recipe found, according to historians is a collection of clay tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. Progressing into Roman times 25BC a man called Apicius created some scripts describing recipes enjoyed by wealthy roman citizens. In his scrolls, he tells us how the meals were split into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. Aspicius tells us how the chefs of Roman times used many different spices and herbs, including many that are still in use today such as basil, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back many spices and herbs from the East, including coriander, parsley, basil and rosemary. The introduction of these new herbs and spices created an eruption in publications on food, many of which still exist in private cookery archives. The TV revolution brings us cooking programs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes like those on this site. |
