The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions way back into the far past, certainly as far into history as the early Egyptians, and possibly even further. Interesting though that is, mostly, these ancient recipes were just primitive pictorial instructions for meal preparation.
As we move into The time of the romans 25BC a roman called Apicius assembled a collection of scripts describing recipes cooked by his fellow Romans. In his works, he recounts how the meals were separated into hors d`oeuvres, main course and afters, a very modern way of dining. Additionally, he describes how the cooks of his times made use of many aromatic flavors, including a few that will be familiar to modern chefs like bay, rue and asafoetida. During the next few hundred years, the upper-class families of Wesstern Europe competed with each other to lay on the best banquets, and consequentially cooks and their collection of recipes were highly sought after. However, it wasn`t until the nineteenth century that cooking and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collating, trying out, and publishing recipes that were common in the better off homes of the day. Like it or not, the introduction of TV brings us cooking programs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to search through massive numbers of recipes like the ones you can find on sites such as this. |
