The History of Recipes
It is quite feasible to trace the history of recipes back into antiquity, in fact as far into history as pharonic Egypt, and potentially, even further back. However, generally, these ancient records were just primitive pictorial recipes for meal preparation.
The truth of the matter is, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. As we move into Roman times around 25BC a man called Apicius compiled a collection of documents showing how to cook the recipes cooked by wealthy roman citizens. In his publication, he recounts how the meals were divided into hors d`oeuvres, main course and desserts, a style of dining still practiced today. Aspicius also tells us how the cooks of his times made use of a wide range of aromatic flavors, including some that we all recognise for example bay, mint and parsley. Later, in the 15th century, the Crusaders brought back a variety of foods and spices from the holy land, including spices like coriander, parsley, basil and rosemary. These new foods and spices led to a torrent in recipe manuscripts, some of which are kept safe in academic collections. By the advent of the twentieth century, cook books are starting to become popular mostly as a result of higher levels of literacy, people having more leisure time and having more disposable income. The introduction of the TV gave us celebrity TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes like the ones you can find on the site you are now reading. |
