The History of Recipes
It is possible to read the history of meal recipes way back into the distant past, in fact as far as the Egyptians, and possibly even further than that. Interesting though that is, sadly, these ancient recipes were just very simple hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe in existence, according to historians are a few stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. Later on, in The time of the roman empire 25BC a man called Apicius assembled a number of documents showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, he describes how the meals were separated into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. Additionally, he informs us how the ancient chefs were skilled in the use of a wide range of spices and herbs, including some familiar names such as basil, fennel and dill. Later, there are two books from the 14th Century ; one book published under the title `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, these are nothing to do with the indian curry that appears on menues today, but rather accounts of the types of food served to the nobility of that time. Later, in the fifteenth century, the Crusaders brought back many new foods, spices and herbs from Arab cooking, such as rosemary and coriander. These new foods and tastes prompted an outbreak in recipe books, some of which are now in private cookery archives. The arrival of television brought us celebrity TV chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this site. |
