1 1/4 cup all-purpose flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/8 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 large egg
2 tbsp fresh lemon juice
1 1/2 tsp vanilla extract
3/4 tsp grated lemon peel
2 cup green apples, coarsely
1 grated peeled (abt 2 lg)
1/2 cup chopped toasted pecans
1 (about 2 ounces)
Directions
Preheat oven to 350 degrees. Grease 1/2-cup muffin cups. Sift all
purpose flour, baking soda, ground cinnamon and salt into medium
bowl. Combine sugar, oil, egg, lemon juice, vanilla and lemon peel in
large bowl; whisk to blend. Mix in dry ingredients, then apples and
pecans. Spoon 1/3 cup batter into each prepared muffin cup. Bake
until tester inserted into centers comes out clean, about 35 minutes.
Turn muffins out onto rack; cool slightly. Serve warm. (Makes about
12)

The History of Recipes
It is possible to track the history of `recipes` far back into ancient history, at least as far back into history as ancient Egypt, and maybe further still. Interesting though that maybe, sadly, these old recipes were just primitive hieroglyphic recipes for food preparation.
In fact, the oldest recipe in existence, according to historians is a collection of tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. Later, there were some recipe books which appeared in the 14th Century ; one book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, they are unconnected to the indian food that we all know today, but rather descriptions of the types of food prepared by the chefs of the upper classes of those days. Later, in the fifteenth century, people returning from the crusades brought us many foods and herbs from Arab countries, including parsley and basil. These new spices and herbs was responsible for a torrent in recipe publications, most of which still exist in academic collections. For the decades that followed, the rich and powerful families of the West competed with each other to offer the most exotic meals, and as a consequence, the best cooks and their recipe collections were much in demand. Even so, it was during the nineteenth century that haute cuisine and recipe books really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collating, trying out, and publishing recipes of the day. By the time we get to the 1900s, cookery books are in great demand, mostly as a result of more people being able to read, more leisure time and having more money. The arrival of television gave us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
