The History of Recipes
It is quite feasible to prove the history of written cooking instructions way back into history, at least as far back into recorded history as ancient Egypt, and possibly even further than that. Having said that, these, old cookbooks were just primitive pictorial instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few clay tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. Later on, in The time of the roman empire 25BC a roman called Apicius compiled a few scripts showing how to cook the recipes cooked by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and afters, a style of dining still practiced today. He also informs us how the Roman cooks made use of a wide range of aromatic flavors, including some that we all recognise like bay, mint and dill. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods, spices and herbs from Arab cuisine, including basil and coriander. These new foods and spices caused an outbreak in manuscripts on cooking, many of which are now in academic collections. By the time we get to the 1900s, cookery books were greatly in demand due to higher levels of literacy, more leisure time and being a little richer. Like it or not, the introduction of TV brings us celebrity chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes like the ones you can find on our web site. |
