The History of Recipes
Written recipes as a concept can be tracked way back into the distant past, in truth as far back into history as ancient Egypt, and potentially, even further back. Having said that, mostly, these ancient cook books were just simple hieroglyphic or cunieform instructions for meal preparation.
Progressing into The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes enjoyed by his fellow Romans. In his scrolls, Apicius tells us how the roman meals were split into appetizers, main meal and afters, something we still use today. He also describes how the early Romans used a good variety of aromatic flavours, including a few that will be familiar to modern cooks like bay, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many foods and herbs from the East, including parsley and basil. The introduction of these new herbs and spices created an explosion in manuscripts on cooking, most of which still exist in private collections. By the time we get to the twentieth century, recipe publications are in high demand, mostly as a result of increased literacy, people having more spare time and having more disposable income. |
