Arrabbiata-Style Spagheti Recipe

Ingredients

1 lb chitterlings mixed with pork (ask b, utcher)
10 shelled walnuts (puree with a littl, e oil)
1/2 cup olive oil
4 cloves garlic (crushed)
1 salt and pepper to taste
1/4 tsp red paprika
1/2 cup white wine
1/3 cup raisins
1 lb spaghetti
1 grated cheese


Directions

*Clean and chop chitterlings. Heat oil in pan. When hot fry
chitterlings and pork with garlic, paprika and pepper for 5 min.
Blanche raisons, drain and add to pan with walnut puree. Add wine.
Stir well and puree in blender until smooth. Serve over hot cooked
spaghetti. Top with cheese.

The History of Recipes

Later on in the 1400s, knights returning from the crusades brought us a variety of foods, spices and herbs from the East, such as parsley, basil and rosemary. The introduction of these new tastes caused an increase in manuscripts on food, most of which are kept safe in private cookery archives.

For the centuries that followed, the wealthy families of Wesstern Europe competed to serve the best banquets, and as a result cooks and their collection of recipes increased in prestige. Notwithstanding that, it wasn`t until the nineteenth century that formal cookery and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and recording the recipes of their peers.

By the advent of the twentieth century, recipe publications are highly popular due to increased literacy, more free time and a general increase in wealth.

The introduction of the TV brought us TV cooks and the spin-off recipe books.
