Arrabbiata-Style Spagheti Recipe

Ingredients

1 lb chitterlings mixed with pork (ask b, utcher)
10 shelled walnuts (puree with a littl, e oil)
1/2 cup olive oil
4 cloves garlic (crushed)
1 salt and pepper to taste
1/4 tsp red paprika
1/2 cup white wine
1/3 cup raisins
1 lb spaghetti
1 grated cheese


Directions

*Clean and chop chitterlings. Heat oil in pan. When hot fry
chitterlings and pork with garlic, paprika and pepper for 5 min.
Blanche raisons, drain and add to pan with walnut puree. Add wine.
Stir well and puree in blender until smooth. Serve over hot cooked
spaghetti. Top with cheese.

The History of Recipes

Later on, in the 15th century, the Crusaders brought back a variety of foods and herbs from middle-east cuisine, such as coriander, parsley, and basil. These new herbs and spices led to an explosion in publications on food, the majority of which still exist in private cookery archives.

Over the succeeding few hundred years, the powerful families of the West competed to serve the most exotic meals, and because of this cooks and their recipes were greatly in demand. Nevertheless, it was during the 19th century that fine cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, verifying, and writing down the recipes that were being prepared for the better households.

The TV revolution brought us TV cooks and the recipe books that accompanied them.
