1 lb chitterlings mixed with pork (ask b, utcher)
10 shelled walnuts (puree with a littl, e oil)
1/2 cup olive oil
4 cloves garlic (crushed)
1 salt and pepper to taste
1/4 tsp red paprika
1/2 cup white wine
1/3 cup raisins
1 lb spaghetti
1 grated cheese
Directions
*Clean and chop chitterlings. Heat oil in pan. When hot fry
chitterlings and pork with garlic, paprika and pepper for 5 min.
Blanche raisons, drain and add to pan with walnut puree. Add wine.
Stir well and puree in blender until smooth. Serve over hot cooked
spaghetti. Top with cheese.

The History of Recipes
Food historians have tracked the existance of recipes far back into history, at least as far into history as early Egypt, and potentially, even further back. In practice though, mostly, these ancient records were just basic hieroglyphic instructions for preparing meals.
In fact, the oldest recipe found, according to experts in ancient history are a few tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. Progressing into Roman times around 25BC a man called Apicius compiled a few scripts detailing recipes prepared by his fellow Romans. He describes how the meals were divided into hors d`oeuvre, main course and dessert, something we still use today. Aspicius also informs us how the Romans made use of a wide range of herbs and spices, including a few that are still present in modern kitchens for example bay, mint and asafoetida. Later on in the 1400s, knights returning from the crusades brought us a variety of foods, spices and herbs from the East, such as parsley, basil and rosemary. The introduction of these new tastes caused an increase in manuscripts on food, most of which are kept safe in private cookery archives. For the centuries that followed, the wealthy families of Wesstern Europe competed to serve the best banquets, and as a result cooks and their collection of recipes increased in prestige. Notwithstanding that, it wasn`t until the nineteenth century that formal cookery and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and recording the recipes of their peers. By the advent of the twentieth century, recipe publications are highly popular due to increased literacy, more free time and a general increase in wealth. The introduction of the TV brought us TV cooks and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes just like those on our web site. |
