The History of Recipes
It is quite possible to follow the history of recipes way back into distant history, in fact as far as the Egypt of the Pharoahs, and possibly even further. Interesting though that maybe, in the main part, these ancient cook books were just very basic hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the most ancient recipe in existence, according to food historians is a series of clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Much later, in Roman times a roman called Apicius created some scripts showing how to cook the recipes prepared by his fellow Romans. In his publication, he describes how the meals were separated into starters, main course and desserts, a style of dining still practiced today. He also tells us how the Romans used a wide range of aromatic flavors, including some that we all recognise for example bay, rue and asafoetida. Later on, in the 15th century, people returning from the crusades brought back many new foods and spices from Arab cooking, including spices like coriander, basil and rosemary. These new spices and herbs was responsible for an increase in books on cookery, many of which still exist in private cookery archives. Over the succeeding few hundred years, the powerful and rich strove to serve the most extravagent meals, and as a consequence, the best chefs and their recipes could command a high salary. Even so, it was during the nineteenth century that cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, trying out, and recording recipes of the day. When we get to the twentieth century, cookbooks are starting to become popular as a result of more people being able to read, people having increased leisure time and having more money to spend. |
