The History of Recipes
It is quite feasible to trace the history of written cooking instructions way back into history, in truth as far back into recorded history as ancient Egypt, and maybe further still. Interesting though that is, generally, these early recipes were just very basic hieroglyphic recipes for preparing food.
As we move into The time of the romans 25BC a roman called Apicius compiled a collection of documents which described recipes prepared by his fellow Romans. In his publication, he tells us how the roman meals were separated into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the ancient Romans made use of a wide range of aromatic flavors, including many that are still in use today like bay, mint and parsley. During the next few hundred years, the upper-class families of the West tried to serve the most exotic meals, and because of this the best cooks and their collection of recipes increased in prestige. However, it was during the nineteenth century that cookery and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and recording recipes to help cooks of their time. Like it or not, the introduction of TV brings us celebrity chefs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes just like those on sites such as this. |
