The History of Recipes
Transcribed cooking instructions as a concept can be traced back into history, in truth as far back as the ancient Egyptians, and possibly even further than that. Interesting though that is, sadly, these early cook books were just primitive pictorial instructions for food preparation.
In an interesting twist, the most ancient recipe discovered so far, according to historians are a few stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. During the time of the Romans a man called Apicius compiled a few scripts which described recipes cooked by the Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, something that is very familiar to us today. He also tells us how the early Romans were skilled in the use of many different spices, including a few you will know such as basil, rue and dill. Moving our culinary historical trip onwards, there are two books dating from the 14th Century ; one book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the spicy food that appears on menues today, but rather accounts of the types of meals eaten by the rich and wealthy people of the period. Later on in the 1400s, people returning from the crusades brought us many new foods, spices and herbs from the East, including spices such as rosemary and coriander. These new herbs and spices created an increase in books on cookery, some of which are kept safe in private libraries. For the next few years, the rich and powerful families of the West tried to offer the best banquets, and as a result chefs and their recipe collections were at a premium. Even so, it wasn`t until the nineteenth century that fine cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collecting, testing, and publishing popular recipes of the day. By the advent of the twentieth century, cookery books are starting to become popular due to increased literacy, more spare time and having more disposable income. |
