The History of Recipes
Transcribed cooking instructions as an idea can be found far back into the far past, certainly as far back into recorded history as early Egypt, and potentially, even further back. Interesting though that is, mostly, these ancient cook books were just very basic hieroglyphic recipes for food preparation.
In an interesting twist, the oldest recipe in existence, according to academics is a collection of tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. Progressing into Roman times 25BC a roman called Apicius created a number of documents detailing recipes prepared by the Romans. In his works, he recounts how the meals were separated into appetizers, main course and desserts, something that is very familiar to us today. Aspicius also tells us how the ancient cooks used many different aromatic flavors, including a few that will be familiar to modern cooks like thyme, rue and asafoetida. Over the succeeding few hundred years, the families of Europe competed to lay on the most extravagent meals, and as a consequence, the best chefs and their recipes were much in demand. However, it was during the nineteenth century that cookery and recipe publications became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collating, trying out, and publishing recipes that were common in the better off homes of the day. When we get to the twentieth century, cookbooks were highly popular mostly as a result of more people being able to read, people having increased leisure time and having more disposable income. |
