The History of Recipes
Historians have tracked the existence of recipes way back into the distant past, in fact as far into history as pharonic Egypt, and quite possibly further than that. Having said that, generally, these ancient recipes were just primitive pictorial recipes for preparing meals.
As we move into The time of the romans 25BC a roman called Apicius assembled a collection of scripts which described recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into appetizers, main meal and desserts, a very modern way of dining. Additionally, he informs us how the Roman chefs made use of a good variety of spices and herbs, including a few you will know such as basil, fennel and parsley. During the next few hundred years, the upper-class families of Wesstern Europe tried to serve up the most extravagent meals, and because of this the best chefs and their collection of recipes were highly sought after. However, it was during the 19th century that cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, testing, and publishing the recipes that were being prepared for the better households. Like it or not, the introduction of TV brings us celebrity TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing us all to search through massive numbers of recipes such as those found on this site. |
