The History of Recipes
Written cooking instructions as an idea can be observed far back into history, in truth as far into history as the early Egyptians, and maybe even further. In practice though, these, early cook books were just basic hieroglyphic or cunieform recipes for preparing food.
Progressing into Roman times 25BC a roman called Apicius wrote a few documents which described recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, main course and desserts, something we still use today. He also informs us how the ancient cooks used many different aromatic flavors, including some that we all recognise for example basil, mint and asafoetida. Over the succeeding few hundred years, the powerful and wealthy tried to offer the most exotic banquets, and as a consequence, chefs and their collection of recipes were much in demand. However, it wasn`t until the nineteenth century that cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, trying out, and writing down the recipes of their peers. The TV revolution gave us celebrity TV chefs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes like those on sites such as the one you are reading now. |
