The History of Recipes
It is possible to read the history of meal recipes far back into the far past, in truth as far as ancient Egypt, and possibly even further. However, generally, these old cookbooks were just very basic hieroglyphic or cunieform recipes for food preparation.
Later on, in The time of the roman empire 25BC a man called Apicius assembled a few documents describing recipes prepared by the Romans. In his publication, Apicius describes how the roman meals were divided into appetizers, entrees and desserts, a style of dining still practiced today. Aspicius also describes how the cooks of his times were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs like basil, rue and dill. For the decades that followed, the powerful families of the West competed with each other to offer the most exotic banquets, and as a consequence, cooks and their collection of recipes were at a premium. Nevertheless, it was during the 1800s that cookery and recipe collections really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the time we get to the 1900s, recipe books are in great demand, due to more people being able to read, more free time and having more disposable income. |
