1 tsp lemon rind, grated
2 tsp lemon juice

The History of Recipes
It is actually possible to trace the history of written cooking instructions far back into distant history, at least as far back into history as ancient Egypt, and possibly even further. However, in the main part, these old records were just basic hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the oldest recipe found, according to experts is a series of stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Moving on, we find a couple of interesting books which date from the 1300s ; a recipe book called `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these are unconnected to the indian food that appears on menues today, but instead descriptions of the types of food on the menus of the nobility of that time. Later, in the 15th century, people returning from the crusades brought back many spices and herbs from the Middle-East, including spices such as basil and coriander. These new herbs and spices prompted a torrent in recipe manuscripts, some of which are now in academic collections. During the following few centuries, the powerful and wealthy competed with each other to offer the most exotic meals, and as a result chefs and their recipe collections became highly prized. Even so, it wasn`t until the 19th century that fine cookery and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collecting, verifying, and writing down recipes to help cooks of their time. When we get to the twentieth century, recipe publications are greatly in demand mostly due to increased literacy, more spare time and being a little richer. The TV revolution brought us TV chefs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of the internet, allowing us all to access massive numbers of recipes such as those found on our web site. |
