The History of Recipes
It is quite possible to follow the history of written cooking instructions far back into history, in truth as far back into history as early Egypt, and possibly even further. However, these, early cook books were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe in existence, according to historians is a series of stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. As we move into Roman times around 25BC a roman called Apicius wrote a number of documents which described recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the chefs of Roman times used a wide range of herbs and spices, including a few that will be familiar to modern chefs such as basil, rue and parsley. During the following few centuries, the powerful and rich houses tried to serve up the most extravagent meals, and as a consequence, chefs and their recipes were greatly in demand. Notwithstanding that, it was during the nineteenth century that fine cooking and cookery books became really popular. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to assembling, verifying, and publishing the recipes that were being prepared for the better households. The revolution that is television gave us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everyone to access thousands of recipes just like those on our site. |
