The History of Recipes
It is quite possible to trace the history of recipes far back into the distant past, at least as far back into recorded history as the Egyptians, and possibly even further than that. However, mostly, these early records were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
During Roman times 25BC a roman called Apicius created a few documents describing recipes prepared by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into appetizers, main meal and desserts, a style of dining still practiced today. Aspicius also recounts how the cooks of his times used many different herbs, including a few that will be familiar to modern cooks for example bay, fennel and asafoetida. In the fifteenth century, people returning from the crusades brought us many foods, spices and herbs from Arab countries, such as coriander, basil and rosemary. These new herbs and spices led to an eruption in recipe books, many of which still exist in private libraries. By the arrival of the 1900s, cookbooks were in great demand, due to more people being able to read, people having more free time and having more money to spend. |
