The History of Recipes
We can trace the history of written recipes way back into the far past, in fact as far back into recorded history as the early Egyptians, and maybe even further. In practice though, generally, these early records were just basic hieroglyphic or cunieform recipes for meal preparation.
Later on, in Roman times around 25BC a roman called Apicius assembled a collection of scripts showing how to cook the recipes enjoyed by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into appetizers, main meal and desserts, something that is very familiar to us today. He also informs us how the Roman cooks made use of a wide range of aromatic flavours, including a few you will know such as bay, mint and parsley. Later on in the 1400s, knights returning from the crusades brought back a variety of spices and herbs from the holy lands, including spices such as coriander, parsley, basil and rosemary. These new culinary innovations led to an explosion in books on cooking, some of which are now in private libraries. By the advent of the twentieth century, cooking books are greatly in demand mostly due to better eduction, leisure time and disposable income. |
