The History of Recipes
Historians have traced the existance of recipes far back into distant history, certainly as far as pharonic Egypt, and possibly even further. Interesting though that is, sadly, these early records were just primitive hieroglyphic or cunieform instructions for food preparation.
During the time of the Roman Empire a roman called Apicius created some scripts detailing recipes prepared by wealthy Romans. In his works, he recounts how the meals were split into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. Additionally, he recounts how the Roman cooks used a wide range of spices, including a few that will be familiar to modern chefs such as basil, mint and parsley. In the fifteenth century, people returning from the crusades brought back a variety of foods and spices from middle-east cuisine, such as coriander, parsley, and rosemary. The introduction of these new culinary ideas caused an explosion in recipe manuscripts, many of which are now in private libraries. Like it or not, the introduction of television gave us TV cooks and the demand for the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting everyone to search through thousands of recipes just like those on this recipe site. |
