The History of Recipes
Academics have traced the existance of recipes back into ancient history, at least as far back as early Egypt, and possibly even further. In practice though, sadly, these old records were just very basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe discovered so far, according to food historians is a collection of stone tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As our culinary historical trip moves on a few more years we have two recipe books which appeared in the 1300s ; a book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, they are unconnected to the indian food that is served today, but instead accounts of the types of meals enjoyed by the rich people of that time. In the fifteenth century, knights returning from the crusades brought back a variety of foods and herbs from Arab cuisine, including spices such as basil and coriander. These new culinary innovations was responsible for an eruption in recipe manuscripts, the majority of which are kept safe in private libraries. During the succeeding few hundred years, the upper-class families of Europe competed to serve up the most extravagent meals, and because of this chefs and their recipe collections could command a high salary. Notwithstanding that, it was during the 19th century that haute cuisine and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, trying out, and writing down recipes for their fellow cooks to enjoy. Like it or not, the introduction of television brings us TV cooks and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everyone to access thousands of recipes just like those on our site. |
