2 medium eggplants
2 tbsp tahini
2 garlic cloves, pressed
1 juice of 1 lemon
2 tbsp chopped fresh parsley (opt)
1/2 tsp salt
1 black pepper to taste
Directions
Preheat oven to 300'F. Pierce eggplant with a fork and bake whole
until eggplant begins to deflate (about 40 minutes). Let cool and
scoop out insides and mash with a fork. Add remaining ingredients and
mix well. Makes 4-6 sandwiches or serves 6-8 as a dip.

The History of Recipes
Transcribed cooking instructions as a concept can be observed far back into distant history, at least as far into history as early Egypt, and possibly even further than that. However, generally, these early recipes were just very basic hieroglyphic recipes for food preparation.
In an interesting twist, the oldest recipe discovered so far, according to historians is a collection of clay tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. Much later, in Roman times a roman called Apicius created some scripts detailing recipes cooked by the Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and desserts, a very modern way of dining. Aspicius tells us how the ancient Romans were skilled in the use of a good variety of spices and herbs, including a few you will know like bay, mint and dill. Over the succeeding few hundred years, the powerful and rich competed to offer the most extravagent meals, and because of this cooks and their collection of recipes were much in demand. Nevertheless, it wasn`t until the 19th century that cookery and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collecting, testing, and publishing recipes to help cooks of their time. When we get to the twentieth century, cookbooks are in great demand, mostly as a result of higher levels of literacy, more free time and having more money. |
