The History of Recipes
Written recipes as an idea can be tracked far back into the far past, at least as far as the early Egyptians, and potentially, even further back. Having said that, mostly, these ancient cook books were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the most ancient recipe in existence, according to experts are some stone tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. During the time of the Roman Empire a roman called Apicius created a collection of scripts which described recipes enjoyed by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into appetizers, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the Roman cooks were skilled in the use of a good variety of spices, including a few that will be familiar to modern chefs like bay, mint and dill. As our culinary historical trip moves on a few more years there were two interesting recipe books which appeared in the 14th Century : a recipe book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Although the titles sound familiar, these two books are not about the curry that is served today, but instead descriptions of the types of food prepared by the chefs of the rich people of the time. In the fifteenth century, people returning from the crusades brought us many new foods and herbs from Arab cooking, such as coriander, parsley, basil and rosemary. The introduction of these new herbs and spices created a torrent in manuscripts on food, the majority of which are kept safe in academic collections. Like it or not, the introduction of television gave us celebrity chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes such as those found on this web site. |
