The History of Recipes
Experts have traced the existence of recipes back into distant history, in truth as far back into history as the Egyptians, and possibly even further than that. Having said that, sadly, these early cook books were just simple pictorial recipes for food preparation.
Fascinatingly, the most ancient recipe found, according to food historians are some tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. During the time of the Roman Empire a man called Apicius compiled some documents which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and afters, something we still use today. Aspicius recounts how the ancient chefs made use of a good variety of herbs and spices, including some that we all recognise such as basil, rue and parsley. In the fifteenth century, knights returning from the crusades brought us many new foods, spices and herbs from the Middle-East, such as coriander, parsley, and rosemary. These new foods and spices prompted an outbreak in manuscripts on food, most of which are kept safe in private collections. Over the following few hundred years, the wealthy families of Europe tried to serve the best banquets, and as a result cooks and their recipes could command a high salary. Nevertheless, it wasn`t until the 1800s that formal cookery and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and writing down recipes for their fellow cooks to enjoy. By the arrival of the 20th century, recipe books were increasing in popularity due to increased literacy, people having more spare time and having more money to spend. The introduction of television brought us celebrity chefs and the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting us all to search through massive numbers of recipes such as those found on our site. |
