The History of Recipes
It is quite feasible to track the history of written cooking instructions far back into ancient history, certainly as far into history as ancient Egypt, and potentially, even further back. Interesting though that is, mostly, these ancient records were just very basic pictorial recipes for preparing meals.
In fact, the oldest recipe found, according to experts in ancient history is a series of ancient tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Progressing into The time of the roman empire 25BC a roman called Apicius created some documents describing recipes prepared by wealthy Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvre, main course and afters, a very modern way of dining. He also tells us how the ancient Romans made use of a wide range of herbs and spices, including a few that are still present in modern kitchens for example basil, mint and parsley. Later on, we find some recipe books which date from the fourteenth century ; a book called `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, these are unconnected to the curry that we all know today, but instead descriptions of the types of food eaten by the rich and powerful of that time. Later on in the 1400s, people returning from the crusades brought back many spices and herbs from the East, including spices like rosemary and coriander. These new foods and tastes prompted a torrent in manuscripts on cooking, the majority of which are kept safe in academic collections. For the centuries that followed, the powerful and rich competed with each other to offer the most exotic meals, and as a result the best chefs and their recipe collections increased in prestige. However, it wasn`t until the nineteenth century that cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and recording recipes common in their social group. By the time we get to the 20th century, cookbooks were in great demand, mostly due to increased literacy, people having increased leisure time and a general increase in wealth. The introduction of the TV gave us TV cookery programs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes just like those on our web site. |
