The History of Recipes
We are able to track the history of written recipes back into the far past, in truth as far back as the ancient Egyptians, and possibly even further than that. In practice though, in the main part, these ancient records were just very basic hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the most ancient recipe found, according to historians are some tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. As we move into The time of the romans around 25BC a man called Apicius created a few documents which described recipes cooked by the Romans. In his publication, Apicius tells us how the roman meals were separated into starters, main meal and desserts, a very modern way of dining. He also recounts how the early Romans made use of a good variety of herbs and spices, including some that we all recognise for example basil, mint and asafoetida. As we move on, we have two interesting recipe books which date from the 14th Century - one book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are a little misleading though, they are unconnected to the indian curry that we all know today, but rather recipes for the types of meals enjoyed by the rich and powerful of that period. Later, in the fifteenth century, knights returning from the crusades brought us many new spices and herbs from the East, such as coriander, basil and rosemary. The introduction of these new tastes was responsible for an eruption in books on cooking, most of which still exist in private libraries. During the following few hundred years, the rich families of Wesstern Europe tried to offer the most exotic banquets, and as a result cooks and their recipes were much in demand. Notwithstanding that, it was during the 19th century that fine cooking and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, verifying, and recording the recipes of their peers. By the advent of the 20th century, cooking publications are starting to become popular mostly due to increased literacy, people having more spare time and having more money. |
