1 1/2 cup graham cracker crumbs, coars
4 tbsp butter, melted
15 oz cheese, ricotta
8 oz cream cheese
4 each eggs, lightly beaten
1/2 cup sugar
1/3 cup bailey's
1 tsp vanilla
1/4 tsp salt
Directions
Combine crumbs and butter, press over bottom and sides of greased
9-inch springform pan. Chill. Preheat oven to 325 degrees. Beat
together ricotta and cream cheese until smooth. Add remaining
ingredients, beat until smooth. Pour mixture into pan. Bake 1 hour
and 15 minutes or until firm in middle (place a shallow pan of water
in oven to cook under my cheesecakes so they don't crack). Cool
20-30 minutes in pan. Cool completely.

The History of Recipes
We are able to follow the history of `recipes` back into the distant past, in truth as far back into history as pharonic Egypt, and quite possibly further than that. In practice though, generally, these old records were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe found, according to experts in ancient history are a few stone tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. Later on, in The time of the roman empire around 25BC a man called Apicius assembled a number of documents which described recipes enjoyed by wealthy roman citizens. He recounts how the roman meals were separated into appetizers, main course and desserts, a very modern way of dining. This early Roman chef recounts how the cooks of his times used a wide range of spices and herbs, including a few that will be familiar to modern cooks such as basil, rue and asafoetida. Later, in the fifteenth century, the Crusaders brought back many new foods and spices from the East, including spices like parsley, basil and rosemary. These new culinary innovations led to a torrent in recipe books, the majority of which still exist in academic collections. By the advent of the 20th century, recipe publications were increasing in popularity as a result of increased literacy, people having increased spare time and a general increase in wealth. The revolution that is television brought us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everyone to access thousands of recipes just like those on this site. |
