The History of Recipes
Recipes as a concept can be found far back into the far past, in fact as far as the ancient Egyptians, and maybe further still. In practice though, in the main part, these old cookbooks were just primitive hieroglyphic recipes for food preparation.
In an interesting twist, the most ancient recipe in existence, according to food historians are a few stone tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Progressing into Roman times 25BC a roman called Apicius created a number of documents showing how to cook the recipes prepared by wealthy Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into starters, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the ancient chefs were skilled in the use of a good variety of aromatic flavors, including some familiar names like bay, rue and dill. Over the succeeding few centuries, the families of Europe strove to lay on the most exotic banquets, and as a consequence, the best cooks and their recipes could command a high salary. Notwithstanding that, it was during the nineteenth century the formal cooking and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and writing down recipes that were common in the better off homes of the day. When we get to the twentieth century, cookbooks were starting to become popular mostly due to more people being able to read, people having more leisure time and having more money to spend. |
