12 oz semi-sweet choc morsels
1/4 cup heavy cream
1 tbsp sweet butter
2 egg yolks
1/4 cup baileys irish cream
Directions
Melt chocolate, Baileys and heavy cream together over very low heat.
Whisk in yolks, one at a time; mixture will thicken. Whisk in butter.
Refrigerate overnight, or until firm. With spoon make small balls.
Roll in powdered sugar, cocoa, chopped nuts, sprinkles, etc.

The History of Recipes
Written cooking instructions as an idea can be found far back into the far past, in fact as far as pharonic Egypt, and maybe further still. Interesting though that is, mostly, these old records were just primitive pictorial instructions for preparing meals.
As we move into The time of the roman empire around 25BC a roman called Apicius created a number of documents showing how to cook the recipes prepared by wealthy Romans. In his works, he recounts how the meals were separated into hors d`oeuvre, main course and afters, something that is very familiar to us today. Aspicius recounts how the Roman cooks used a wide range of herbs, including a few you will know such as basil, rue and parsley. Over the next few hundred years, the families of Europe strove to lay on the most extravagent meals, and as a consequence, the best cooks and their collection of recipes became highly prized. However, it wasn`t until the nineteenth century the formal cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, verifying, and writing down the recipes that were being prepared for the better households. The arrival of TV gave us celebrity TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting us all to access thousands of recipes just like those on this web site. |
