The History of Recipes
We can follow the history of written recipes back into antiquity, at least as far back into recorded history as the early Egyptians, and maybe further still. In practice though, mostly, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Later on, in The time of the romans around 25BC a man called Apicius compiled a collection of scripts describing recipes prepared by his fellow Romans. He describes how the meals were divided into appetizers, entrees and desserts, something that is very familiar to us today. Aspicius also recounts how the chefs of Roman times were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern chefs such as thyme, mint and dill. Later on in the 1400s, the Crusaders brought back many spices and herbs from the East, including basil and rosemary. The introduction of these new tastes created a surge in books on cookery, some of which are now in private cookery archives. The arrival of television brought us TV cookery programs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to access massive numbers of recipes just like those on sites such as the one you are reading now. |
