The History of Recipes
Written recipes as an idea can be observed far back into ancient history, at least as far back into history as the ancient Egyptians, and possibly even further than that. In practice though, mostly, these early recipes were just simple hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to historians is a collection of clay tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Continuing our culinary historical journey, there were a couple of interesting books dating from the 14th Century : one book entitled `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, these have no connection with the indian food that appears on menues today, but rather recipes for the types of food on the menues of the rich and wealthy people of the period. Later on, in the 15th century, people returning from the crusades brought us many spices and herbs from the holy lands, such as coriander, parsley, basil and rosemary. The introduction of these new tastes caused an explosion in recipe publications, some of which still exist in private collections. Over the succeeding few hundred years, the rich and powerful families of the West competed with each other to offer the most exotic banquets, and consequentially cooks and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, verifying, and writing down the recipes that were being prepared for the better households. When we get to the twentieth century, cookery books are in great demand, mostly due to better eduction, more free time and having more money. The TV revolution gave us TV cookery programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes such as those found on our site. |
