The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions back into history, certainly as far back as the Egypt of the Pharoahs, and potentially, even further back. However, these, old recipes were just very basic pictorial recipes for preparing food.
Interestingly, the oldest recipe in existence, according to academics are a few clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. As we move into The time of the romans 25BC a man called Apicius compiled a number of scripts describing recipes cooked by wealthy Romans. In his works, he recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and dessert, something we still use today. He also informs us how the ancient chefs were skilled in the use of many spices, including a few that will be familiar to modern chefs for example thyme, rue and asafoetida. Moving on, there are a couple of interesting recipe books published in the fourteenth century - a cookery book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Perhaps surprisingly, these are unconnected to the curry that is familiar to us all today, but instead recipes for the types of meals cooked for the rich and wealthy people of that period. Later, in the 15th century, knights returning from the crusades brought us many foods and spices from Arab countries, including spices like coriander, parsley, and rosemary. The introduction of these new foods and spices prompted an eruption in publications on food, many of which are kept safe in private collections. During the next few hundred years, the wealthy families of Wesstern Europe competed with each other to serve the most extravagent banquests, and as a consequence, the best chefs and their recipes were much in demand. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, testing, and publishing the recipes of their peers. By the time we get to the twentieth century, recipe publications are in high demand, as a result of more people being able to read, people having increased spare time and having more disposable income. Like it or not, the introduction of TV brought us cooking programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes like the ones you can find on this web site. |
