4 cornish game hens
1/2 cup butter
2 tbsp lemon juice
1 tsp rosemary
2 cloves garlic, pressed
Directions
Rub hens with butter. Combine other ingredients and use to baste
hens. Bake at 350 degrees for 1 hour, basting with lemon mixture
every 10 minutes. If serving with rice, spoon remaining lemon mixture
over rice.

The History of Recipes
We are able to follow the history of written recipes back into distant history, certainly as far back as ancient Egypt, and maybe even further. However, mostly, these early cook books were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
During the time of the Romans a roman called Apicius assembled a number of documents which described recipes prepared by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, a very modern way of dining. Additionally, he describes how the Roman chefs were skilled in the use of a good variety of spices, including some familiar names for example bay, rue and parsley. Later on, in the 15th century, knights returning from the crusades brought back many new foods and spices from the East, including spices such as coriander, parsley, and basil. The introduction of these new herbs and spices prompted a surge in manuscripts on cooking, the majority of which are now in private libraries. When we get to the 20th century, cookery publications were increasing in popularity as a result of increased literacy, more spare time and a general increase in wealth. |
