Baked Egg Plant (M_C-Tx) Recipe

Ingredients

1 1/2 lb egg plant, peeled and cut in 1 cube, s
1/2 loaf stale white bread cut in 1 cub, es
1/2 cup evaporated milk
1/4 cup sweet milk
1/4 cup butter
1/4 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup chopped celery
2 eggs
1 tbsp pimento
2 tsp salt
1/4 tsp sage
1/2 tsp pepper
1 1/2 cup grated cheddar cheese


Directions

Soak egg plant 2 hours in salted water, then drain. Cook in water
until tender, about 5 minutes. Combine bread crumbs with evaporated
and fresh milks. Meltbutter in sauce pan, add onion, green pepper and
celery, saute 10 minutes. Add drained egg plant and soaked bread
cubes to vegetables. Remove from heat. Add eggs and pimento, mix
well. Place in 2 quart baking dish. Cook 45 minutes then top with
grated cheese and return to oven just long enough to melt cheese.
Bake at 350 .

The History of Recipes

It is quite feasible to follow the history of recipes back into the distant past, in truth as far as the early Egyptians, and possibly even further than that. In practice though, these, ancient cook books were just very basic pictorial instructions for preparing food.

Despite their titles, they are nothing to do with the curry that appears on menues today, but instead recipes for the types of meals prepared by the chefs of the rich and wealthy people of the period.

Later, in the 15th century, the Crusaders brought back many new spices and herbs from middle-east cuisine, such as rosemary and coriander. The introduction of these new culinary ideas was responsible for a surge in manuscripts on food, some of which are kept safe in private libraries.

During the next few hundred years, the powerful families of Wesstern Europe tried to lay on the most exotic banquets, and because of this cooks and their recipe collections were highly sought after. However, it was during the 1800s that formal cookery and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collating, trying out, and publishing the recipes of their peers.

By the time we get to the twentieth century, recipe publications were increasing in popularity mostly due to higher levels of literacy, people having more free time and being a little richer.

Like it or not, the introduction of TV brought us celebrity chefs and the accompanying recipe books.

Which brings us neatly to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes like those on sites such as this.
