The History of Recipes
Recipes as an idea can be traced back into ancient history, in truth as far back as pharonic Egypt, and maybe even further. In practice though, these, old recipes were just very basic hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the most ancient recipe found, according to experts in ancient history is a series of stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. During the time of the Romans a man called Apicius created some documents which described recipes cooked by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were separated into appetizers, main meal and desserts, something that is very familiar to us today. Aspicius also tells us how the ancient cooks made use of a good variety of spices and herbs, including some familiar names like basil, rue and asafoetida. Over the next few hundred years, the rich families of the West tried to offer the most extravagent banquests, and as a result chefs and their collection of recipes increased in prestige. However, it was during the 19th century that cookery and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collecting, testing, and writing down recipes to help cooks of their time. When we get to the 20th century, cooking publications were starting to become popular as a result of increased literacy, increased leisure time and a general increase in wealth. The arrival of TV brings us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes such as those found on this site. |
