The History of Recipes
Food historians have traced the existance of recipes far back into the far past, in truth as far into history as the Egyptians, and quite possibly further than that. Having said that, mostly, these old records were just very basic hieroglyphic recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, are some tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. As our culinary historical trip moves on a few more years we find two interesting recipe books from the fourteenth century : one book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Amusingly, these are unconnected to the indian food that we all know today, but rather descriptions of the types of meals eaten by the rich and wealthy people of that time. Over the following few centuries, the wealthy families of the West competed with each other to serve up the most extravagent meals, and as a consequence, the best cooks and their collection of recipes were at a premium. Even so, it wasn`t until the 19th century that haute cuisine and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collating, testing, and recording recipes of the day. When we get to the 1900s, cooking books were in high demand, mostly as a result of more people being able to read, people having more spare time and having more disposable income. The arrival of TV brought us cooking programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everybody to search through thousands of recipes like the ones you can find on this recipe site. |
